Our tomatoes are picked at perfect maturity in the summer months of July, August, and September. Cultivated in open fields and preserved at peak ripeness, they capture the warmth of the sun – as well as the farmers’ respect for the Pugliese land. To preserve the taste and quality, tomatoes processed by hand within 24 hours of harvesting. In this pairing, you receive two jars of plum tomatoes prepared in different traditional manners.
For “Pomodori Pelati a Mano,” we hand-peel the tomatoes and bottle them whole. For “Spaccatella di Pomodoro,” we cut the tomatoes into halves or quarters without removing the peel. “Pomodori Pelati a Mano” are ideal as a whole-tomato base for sauces to dress pasta. “Spaccatella di Pomodoro” is great for recipes requiring tomatoes with the peel on – like pizza.
