Cavatelli, meaning “little hollows”, is traditionally made by rolling a small piece of dough across a floured surface with one finger. This produces a rolled shape with a small cavity in the center, hence the name.
This shape makes the pasta perfect for gripping sauces, especially chunkier ones such as the traditional broccoli rabe and sausage from Puglia.
