Our trio of spreads (black olive, artichoke and eggplant tapenades) are made of excellent raw ingredients from Puglia. Our trio is useful pantry favorite as an accompaniment to appetizers, a tasty side dish for meat and poultry, and a spread to add exquisite flavor to sandwiches.
Immediately after harvesting the eggplant, the artichokes and black olives, our farmer clean and wash them thoroughly. We then put them into vinegar and salt and centrifuge them. We dress the savory mixture with extra virgin olive oil and spices and pasteurize in a steam autoclave to preserve the great taste.
